Established in 2011, HinoMaru Ramen is humbled to be the first ramen-ya to open its doors in Astoria. HinoMaru 日の丸 loosely translates to the “circle of the sun”.  We specialize in seven regional Japanese ramen–from Sapporo in the north to Kagoshima in the south.

All of our broths are house-made.  The tonkotsu bone broth is our signature preparation.  To render as much flavor, fat, and protein as possible, we keep the broth on a rolling boil for 17 hours.  We slowly reduced the broth at decreasing temperatures to release the complex bone marrowy flavors.   For us, quality ramen starts and ends with our broths!

Our signature ramen. Hakata-style pork bone broth w/ braised chashu pork, kikurage, menma, scallion, bean sprouts, fire ball, nori, and fish cake. Spicy.

Hakata-style pork bone broth w/ wok-roasted spicy togarashi, tiger shrimp, squid, mussel, pork, cabbage, carrots, kikurage, bean sprout, scallion, and fish cake. Spicy.
